Reward Nuggets

1 C. Rice Krispies
3/4 C. Small pretzels –broken up
6 oz. semi-sweet chocolate chips
1/4 C. Almond butter (or peanut butter)
1/2 C. Chopped almonds (optional)


Melt Chocolate chips in microwave for 1 minute at 50% stirring ½ way so it won’t burn.
Add the almond butter to melted chocolate chips. Stir to mix- add rice cereal, pretzels and almonds. Mix well to coat all. Drop by spoonful on to cookie sheet and chill in the refrigerator for at least 15-20 minutes. Keep refrigerated.


2 nuggets= 194 calories 8 grams Fat

Lean and Healthy Turkey Loaf

1 lb. Ground Turkey Breast
1/2 Red bell pepper- chopped
1/2 Small onion- chopped
1 Clove garlic- chopped
1 Handful  fresh spinach-chopped
1/2 C. egg whites
1/2 C. oatmeal
1 T. Heinz 57 sauce
1 tsp. pic-a-pepa sauce
Salt and pepper


In large sauce pan, sauté the bell pepper, onion, garlic. When soft, turn the heat off and add the chopped spinach so it will wilt when stirred into the hot veggies.
In a large bowl mix the turkey with the egg whites, oatmeal, Heinz 57 sauce, pic-a-pepa sauce and a little salt and pepper then add the veggies and mix well.

Spray a pie plate or baking dish with non-stick spray and pat the meatloaf into a 1 inch thick “patty”. Spread 1-2 Tablespoons of ketchup over the top and bake at 400 degrees for 25-30 minutes.

Apple Slaw Treat

3 Apples- gala-braburn-fuji- peeled and cored
1/4 C. Sweet Red Wine
1 T. Cinnamon
1/4 C. Raisins
1/4 C. Pecans –Chopped


Shred the apples in a food processor or a grater (just watch the knuckles!).  Mix all together. Let set in refrigerator for 1-2 hours.  Keep refrigerated.  
Great with plain Greek yogurt.

Tangy Tuna Salad

1 Large can white chunk alabacore tuna

   (in water) drained
1/2 Can red beans- drained
10 Spanish green olives with pimentos in jar
2 T. Chopped red onion or sweet onion
2 T. Capers
2 T. Chopped celery
1 Tsp. Dill weed (not seed)
1 T. White balsamic vinegar- or more
1 small granny smith  or gala apple –chopped
Salt and pepper to taste


Put all ingredients –except the vinegar in a large bowl and mix well.  Start with 1 Tablespoon of the vinegar, mix, add salt and pepper to taste.
If too dry, add a little more vinegar to the taste and moisture you like.
